Day one...

Hey everyone,

First day of Vegetarianism (spelling?) wasn't as bad as I thought... not that I thought it was bad at all but work with me here...anyway...the only part where I had to deal with the forbidden substance (meat) was when my Dad asked me if I wanted to have some pasta that he made that had hot Italian sausage in it (damn that was tempting that stuff is the shit) but, honestly it wasn't that bad I just had to pretty much eat what I wanted but not have any of the normal meat products that I would normally have...Something tells me that this month shouldn't be to hard!

Good for you, Matt. Lots of times the first few days of a new habit are hardest. So, try any new grains lately?

I don't have very many specific vegetarian recipes, because I think vegetables taste great just as they are.

Okay, I don't eat all of them raw, all of the time. Potatoes taste better baked, boiled, roasted, mashed, or fried, for example. And most beans need some heat, too, even if you later eat them cold (like chick peas in a salad).

Now that the nice weather is here, the way to really enjoy vegetables is to cook them on the grill. Make a brush-on sauce with olive oil and balsamic vinegar, and pretty much anything that won't fall through the cracks comes out great, from asparagus to zucchini. Things that are too small to stand alone on the grill can be skewered; e.g., cherry tomatoes, mushrooms, hunks of onion and pepper.

Ummm . . . vegetable kabobs. Can't wait to unpack my grill!

Last thought: Maura makes a (cooked) dish with yams and arugala that is absolutely outstanding. You'll have to write to her directly for the recipe, since she shuns the blogosphere.
